The chef Eric Prowalski

“I’m lucky; I have two cultures to draw on! One comes from my family background in the south-west of France. Then there’s the culture of my adopted region (Annecy in the Haute-Savoie), where I’ve been given a great welcome. Every day, I create a specific palette of tastes from these two sources of inspiration.” Eric Prowalski, winner of the Gault et Millau seafood trophy for 2019.

He has been directing Les Trésom’s kitchens since 2011. Today, chef Eric Prowalski’s approach is inspired partly by the plains of Aquitaine and partly by the steeper terrain of the Alps. These are two unspoiled regions, with strong and complementary cultures. Their spirit enables our chef to give you a gastronomic experience of conspicuous excellence, favouring low food-miles and local suppliers in Savoie, with nuances that recall his origins.

Les Trésoms, driven by local produce

The cuisine at Les Trésoms is a happy blend of seasonal tastes and regional products. To design his dishes, Eric Prowalski shops locally, applies some of the character of the region where he was born, and chooses only the freshest products. Meet the men and women whose produce gives our region its unique wealth, at the Les Trésoms Producers’ Market, 11th edition on Saturday 11 December 2021.
If you like a particular product and want to find it for yourself, we can share our address book with you.
